More Food

I have been wanting the cookbook “Cook Yourself Thin” for ages but was not willing to spend the $30 the stores wanted for it. Normally, I don’t use cookbooks at all or only for inspiration but this one looked so great with normal food made to be a little easier on the waist line. So a few months pass and I stop thinking about it until we took a trip to Blockbuster. Yes, Blockbuster! We were there in search of a movie but there it was on a shelf all by itself!! At first I thought someone must have lost it there but a closer investigation found a Blockbuster bar-code and a clearance sticker!! MINE!!!! It was only $6!!! This had to be the weirdest and most random purchase at a movie store of all time but hey, $6 rules!

My first recipe made from the book was a stretch for both of us but we decided to try it: spinach with turkey kielbasa and roasted red pepper/rosemary cornbread. We were both nervous with the spinach because I usually use it along with stronger flavors to mellow it out. Surprisingly, we both really liked it!! The recipe called for garlic and lemon juice in the spinach which I thought might be odd but it really took out that bitter, earthiness that spinach can sometimes have and made it really flavorful!

The second attempt was a sweet and sour pork dish served over brown rice. This was another out-of-my-box moment because we don’t eat pork, but I thought I’d give it a shot. Oh boy, all I can say is YUM. Crisp, red pepper and onion married to marinaded pork with a killer sauce of pineapple juice and other amazing flavors over fluffy brown rice…yummmmy!!

The third dinner from the book was even better than the first two. Buffalo chicken tenders over ceaser salad.  Holy Cow. It was supposed to be over a blue cheese salad but in our opinion, blue mold has no place in our cheese or in our dinner. So I figured it would be just as yummy over a ceaser salad made with a light dressing. To tie the flavors together, I also added parmesan cheese to the breading on the tenders and it worked beautifully. It was spicy and fresh and guiltless…even my hubby was thrilled with it even though it was salad for dinner! Hahaha!!

That’s all so far from the book but I had to throw in one of my own that I just came up with this week. It’s like a sophisticated breakfast for dinner. Sauteed red potato with onion, asparagus and turkey sausage with a side of scrambled eggs topped with some grated parmesan and ramono cheese. Very tasty.

I hope this has inspired some yummy dinner ideas for you guys and I do highly recommend the cookbook “Cook Yourself Thin”. It is one of very, very few cookbooks I see myself using a lot in the future.
